The founders Carly and Ian met while working together as sommeliers at The French Laundry. After having kids they quit drinking, and when they couldn’t find classic zero proof bitters to complete their non-alcoholic cocktails, they decided to create their own. They started out by testing recipes in their home kitchen, in small mason jars. After about a year they locked in the recipes for three classic bitters inspired by Angostura, Peychaud’s, and Regan’s Orange, and then scaled up into a commercial kitchen and 55 gallon drums. The response from the non-alc and bartending community has been overwhelmingly positive, and they’ve won bronze, silver, and gold medals from the LA Spirits Awards, SF World Spirits Competition, London Spirits Competition, and World AF Awards. All The Bitter are all made with organic, wild foraged, and functional botanicals, and they do everything entirely by hand from start to finish in a process that takes more than 2 months. The company donates 1% of their sales to planting trees, and another 2% of sales goes towards helping people fight alcohol use disorder.
