The Hugo is normally a wine based cocktail that is weirdly popular in Germany, for some reason. It’s a light summer drink and it’s easily adapted for those of us who want something special but non-alcoholic. It’s also very easy to prepare, all you need is a wine glass.
3 cl. of elderflower cordial
9 cl. of sparkling mineral water (you can substitute a premade fizzy elderflower drink).
A few mint leaves.
Crush a few mint leaves with the elderflower syrup and lime juice in the bottom of a wine glass. Add a few extra mint leaves and top up with sparkling water. Garnish with a slice of lime.
