Nonsuch’s founder, Henry, was looking for alternatives to alcohol when he took a month off drinking over 15 years ago. His relief that he found this relatively easy to do was matched by his frustration at the lack of good alcohol alternatives. Henry’s background is as part of the Aspall Cyder and Vinegar business, so he was well aware of vinegar’s place within a range of drinks, though mainly on a health basis. Henry started experimenting using vinegar as a base, combining it with fruit and botanicals to make a rich, satisfying alcohol alternative. It was during this experimentation that he discovered the incredibly rich history of vinegar based drinks. Dating back to Babylonian times, these drinks are known as shrubs, a derivative of the original name for them ‘Sharab’ – or simply drink.
