Eric Dalsace always loved strong drinks, those that burn the lips and set your mouth on fire. For a long time, he was searching for a fiery alcohol-free soft drink to enjoy on its own and to use as a mixer. He found himself searching Paris for Thai spices, African syrups, Chinese roots, Caribbean fruits, Indian peppers, English sodas, Jamaican juices, and experimenting with his own recipes, transforming his kitchen into some kind of laboratory. He came up with a trio of ginger, tonic, and chilli and couldn’t believe his taste buds – the drink was fruity and spicy, sweet and strong, soft like soda, yet harsh like a spirit.
